Restaurant « Jardin Paul Bocuse »
Lunch or dinner in the Jardin Paul Bocuse restaurant is a chance to experience the extraordinary partnership between internationally renowned cook Paul Bocuse’s french cuisine and local delicacies of Mr. Hiroyuki Hiramatsu. Using locally produced ingredients, whether it be fish and seafood from the nearby sea of Japan or regional fresh vegetables, the two chefs have created specialities such as foie gras de canard with Kale and truffle sauce, a trademark dish of Hiramatsu`s restaurant, or the famous Soupe au truffes noires Valérie Giscard d’Estaing, created by Paul Bocuse in 1975 in honour of the French president. The restaurant is divided into two rooms and decorated with motifs and materials that highlight the traditional culture of Kanazawa (gold embellishment, yukizuri – rope supporting trees during the winter months in the Kenrokuen gardens, etc.)

Or for a light meal or a break, you can stop at the « Café & Brasserie Paul Bocuse » when on nice days the terrace is open where you can enjoy refreshment in the garden. The garden itself is home to a three hundred year old tree that the Shiinoki cultural complex is named after (« Shii »: Castanopsis sieboldii) where the two establishments are found.
