1 – Tsubajin Restaurant and Kaga cuisine

The Tsubajin restaurant is a testament to the development of Kaga cuisine, a regional variety of kaiseki ryori (a traditional Japanese multi-course meal), which is considered to be one of the three main traditional Japanese cuisines along with those of Kyoto and Tokyo. Overlooking the south bank of the Saigawa river, the restaurant itself is particularly beautiful and each room has its own style.

 

Founded in 1752, its history began with Jinbe, heir to the third generation of sword smiths to the Maeda family, who started the restaurant to entertain friends and acquaintances. The restaurant’s reputation quickly grew and it became a prestigious venue for visiting dignitaries.

The Kaga cuisine served at Tsubajin is composed of several small courses prepared from seasonal ingredients, and is served in locally made Kutani ceramic ware or gold leaf lacquer ware. For a taste of an authentic traditional nuptial meal local to this area, the symbolic “tai no karamushi” steamed sea bream, made to order, is particularly delicious. You can also watch the preparation of Amberjack, a type of small tuna, at your table, so that you can admire the skill of a professional as he prepares your meal. For an extra fee, you can add a highly recommended Kanazawa Geiko performance to your meal.

In addition to its refined side, Tsubajin also offers popular and family food. Local festivities are one of the many opportunities to discover dishes such as “Kabura-zushi” (winter sushi made from fermented vegetables), “Berobero” (agar jelly with eggs and ginger), and “oshi-zushi” (square shaped sushi). - Geiko performance: ¥30 000 for a 2 hour show by one geiko (in addition to the meal)
