3 – Otomoro (restaurant)
The oldest establishment in Kanazawa, the restaurant first opened in 1830. Catering for the Kaga fief from father to son for the last 180 years, the restaurant’s owner is the 16th to hold the title. The cuisine for ceremonies and festivities has been faithfully reproduced with utmost respect for tradition, and the tai no karamushi (steamed sea bream) or the seasonal jibuni are a must. The restaurant is still quite confidential. It doesn’t have a website and documentation is only available in Japanese, so it is best to be accompanied by an interpreter or a guide in order to fully appreciate the experience.
